History of Cheese

Cheese predates recorded history and was most likely discovered by accident during the transport of fresh milk in the organs of ruminants such as sheep, goats, cows, and buffalo 1. It is thought that cheese was first discovered around 8000 BC around the time when sheep were first domesticated. Rennet, the enzyme used to make cheese, is naturally present in the stomachs of ruminants. The leak-proof stomachs and other bladder-like organs of animals were often put to use to store and transport milk and other liquids. Without refrigeration, warm summer heat in combination with residual rennet in the stomach lining would have naturally curdled the milk to produce the earliest forms of cheese. These milk curds were strained, and salt was added for extra preservation, giving birth to what we now know as “cheese”.

Early Cheesemaking
Early cheesemaking is prevalent in the Middle East, Europe, and Central Asia 1. The earliest forms of cheese were made daily and eaten fresh due to warm climates. Early Roman texts describe how ancient Romans enjoyed cheese often. They enjoyed a wide variety of cheeses, and cheese-making was already considered an art form. They provided hard cheese for the Roman legions.

Types of Cheese
Cheese comes in many varieties, each with its own unique flavor and texture. Some popular types of cheese include:

  • Cheddar: A hard English cheese that is often used in sandwiches or grated over pasta dishes.
  • Brie: A soft French cheese with a mild flavor that is often served with crackers or fruit.
  • Mozzarella: An Italian cheese that is often used on pizza or in salads.
  • Feta: A Greek cheese that is often crumbled over salads or used in Mediterranean dishes.
  • Gouda: A Dutch cheese that is often used in sandwiches or grated over pasta dishes.

Is Cheese Good For You?
Cheese is a good source of calcium, protein, and vitamin D 1. However, it is also high in fat (varies by cheese type) and sodium. Therefore, cheese should be consumed in moderation as part of a balanced diet.

Best Cheeses for Your Health
Some cheeses are healthier than others. Here are some examples:

Parmesan: A hard Italian cheese that is high in protein and calcium but low in fat.
Swiss: A low-fat cheese that is high in protein and calcium.
Feta: A Greek cheese that is lower in fat than many other types of cheese.
Mozzarella: An Italian cheese that is lower in fat than many other types of cheese.
